You would not be off beam to think that this Mediterranean sauce is technically mayonnaise, but it has one ingredient that makes a huge difference: garlic. By roasting the garlic before, the flavour will become more intense and it will be easier to mix with the rest of the ingredients.

This savoury sauce is more and more popular in our kitchens due to its versatility. A perfect dipping sauce for our delicious Chicken Shop products or battered or breaded fish, or simply enjoyed with chips: the possibilities are aplenty. 

Our method

  1. Gently pour in the olive oil while blending to make a thick mayonnaise-style sauce.
  2. Season to taste with a little salt and lemon juice.
  3. Place garlic, egg yolks and mustard into a blender and blend until smooth.
