Bring a little taste of Mexico to the party with this deliciously cheesy Mexican classic!

Chicken quesadillas are always a crowd pleaser. Not only are they filled with gooey cheese and tender chicken, but when you add a delicious creamy sauce to bring all the flavours together you will make this dish completely irresistible.

Stuffed with chargrilled chicken, peppers, onions, sweetcorn, and cheddar cheese, this easy chicken quesadilla recipes makes for the perfect starter and double up as an after school snack or week night dinner the whole family can enjoy.

Our method

  1. Preheat the oven to 180°C.

  2. Cook the chicken chargrills as per the pack instructions.

  3. Add 1 tsp of oil to a pan and add the chopped onions and peppers.

  4. Refer to pack cooking instructions to cook the sweetcorn. Add the sweetcorn, cheese, coriander, tin tomatoes, sour cream and season to taste. Feel free to add in salt and pepper if you like!

  5. Slice the chicken chargrills and add to the mix.

  6. Cut the tortilla wraps in 4 and place them in a hot pan until there stiff and hold their shape.

  7. Add mixture between two quarters of the wrap and you’re ready to serve.
