The silver smelt is a slender fish from the northern Atlantic. It is distributed around Iceland, the Faroe Islands, Greenland, Norway and Scotland, but also in the northern North Sea and the Skagerrak.
When freshly caught they are silver and yellowish with a golden shimmer. The silver smelt has large eyes and an adipose fin on the back. They can reach a maximum length of 70 cm and live up to 35 years, but are usually caught at smaller sizes. The fish live in swarms , near the bottom, at depths up to 1400 meters. Freshly caught specimens smell like cucumber. They feed on planktonic invertebrates including crustaceans, chaetognaths, squids and ctenophores as well as small fish.
The flesh of silver smelts is white and rich in protein, with a mild flavour. This makes it ideal for combining or mixing with other more spicy flavours, herbs and spices. Apart from being rich in protein, silver smelt is also a great source of vitamin B12.
